  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder

  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease with butter.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the melted butter, whole milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and gently fold until just combined; be careful not to overmix.
  5. For the streusel topping, mix together flour, brown sugar, and cinnamon, then cut in the cold butter until crumbly.
  6. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  7. Sprinkle the streusel topping generously over the batter.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean and the tops are golden brown.
  9. Allow the muffins to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
