Ingredients

  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan thoroughly.
  2. Mash the ripe bananas with a fork until smooth and stir in the melted butter.
  3. Add baking soda and salt, mixing briefly.
  4. Gradually stir in sugar, then add the beaten egg and vanilla extract, blending until incorporated.
  5. Gently mix in the flour until just combined, avoiding over-mixing. Fold in the walnuts and raisins.
  6. Pour the batter into the greased loaf pan and smooth it out.
  7. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

For maximum moisture, use very ripe bananas. Adjust sugar based on banana sweetness. Can be made gluten-free with a suitable flour substitute.
